Ramos Gin Fizz

You will need for 1 glass:

1 egg white 3 parts gin

4-5 Ice cubes 3 drops Angostura

1 part fresh lemon juice bitters 1 part thin cream soda water (optional)

1 Put the Ice cubes into a cocktail shaker.

2 Pour in the lemon juice, cream and gin.

3 Add the egg white to the gin mixture.

4 Put Angostura bitters over the mixture.

5 Shake until a frost forms.

6 Pour without straining into a highball glass; if wanted top with soda water, and serve.

Morning Glory Fizz

You will need for 1 glass:

4-5 Ice cubes

3 parts gin

1 part fresh lemon juice 1 egg white

1 teaspoon sugar or

3 drops Pernod sugar syrup ginger ale

1 Put the Ice cubes into a cocktail shaker.

2 Pour the lemon juice, sugar and gin over the ice.

3 Add the egg white to the gin mixture.

4 Add the Pernod.

5 Shake until a frost forms.

6 Strain and pour into a lowball glass and top with ginger ale.
